375g dry penne pasta 3/4lb
1 whole rotisserie chicken 1 (available in the deli)
30 ml olive oil 2 tbsp
1 small red onion, sliced 1
1 small red pepper, seeded, julienne 1
175 ml Sauterne cooking wine 3/4 cup
5-19 ml sambal oelek 1-2 tsp
5 ml salt 1tsp
125 ml chicken or vegetable stock 1/2 cup
125 ml whipping cream 1/2 cup
24 cherry or other small tomatoes, halved 24
3 avocadoes, peeled, cut into large chunks 3
125 ml packed chopped cilantro 1/2 cup
  1. Add the pasta to a large pot of boiling water. Cook until al dente. Drain. Meanwhile, pull the meat off the chicken, shredding the meat.
  2. Place a large saute pan or skillet over low heat; add oil. Add peeled whole garlic cloves and toss for a few minutes until cloves are golden; remove and mash. Add to chicken. Add onion and peppers to the garlic-infused oil still in the pan and raise the heat to medium. Toss for about 30 seconds.
  3. Add sambal oelek, cooking wine, salt and stock to the pan. Cook, stirring constantly, for another 1 minute. Add cream and cook another 30 seconds. Add chicken, garlic, tomatoes, avocado and cilantro. Toss gently; add penne and toss all ingredients together for another minute just until the tomatoes and avocado are heated through. Serve at once with crisp salad.
