4 thin slices bacon
10 ml olive oil 2 tsp
250 ml chopped onion 1 cup
6 garlic cloves, minced
250 ml chopped celery 1 cup
4 medium carrots, chopped
45 ml all purpose flour 3 tbsp
125 ml dry sherry or wine ½ cup
375 ml chicken broth 1 ½ cups
1 kg chicken thighs, boneless, skinless, chopped, 2 lbs
15 ml fresh thyme, chopped 1 tbsp
250 ml frozen peas 1 cup
60 ml light sour cream 1/4 cup
  1. Brown the bacon in a large saucepan over medium heat. Remove to a paper towel-lined plate. Drain the fat from the pan and discard. Heat the olive oil in the same pan. Add onion, garlic, celery and carrots. Cook, stirring occasionally, for about 5 minutes or until onion is soft.
  2. Add the flour and cook, stirring for 1 minute. Stir in sherry or wine. Add broth, chicken, thyme and bacon. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, for about 25 minutes or until thickened. Stir in the peas and sour cream. Season with salt and pepper to taste. Cook until heated through.
