Speedy Lemon-Orange Chicken

1L water 4 cups
750 g boneless chicken,
30 ml peanut oil 2 tbsp
10 ml finely chopped fresh ginger 2 tsp
4 cloves garlic
15 ml grated lemon peel 1tbsp
15 ml grated orange peel 1tbsp
125 ml Western Family lemon juice 1/ 2 cup
125 ml Western Family orange juice 1/ 2 cup
30 ml sugar 2 tbsp
30 ml Western Family soy sauce 2 tbsp
25 ml Western Family cornstarch, mixed with 1tbsp (15 mL) water 5 tsp
15 ml sesame oil 1tbsp
30 ml thinly sliced green onions 2 tbsp (garnish)
  1. In a medium saucepan heat water until boiling; immerse chicken pieces for 2 minutes; remove chicken and keep warm.
  2. Heat oil in wok over medium heat. Add ginger and garlic; stirfry 30 seconds.
  3. Add remaining sauce ingredients; bring to a boil; simmer for 1-2 minutes or until thickened.
  4. Add chicken pieces; cook 3 more minutes or until chicken is cooked through.
  5. Sprinkle with green onions and serve at once.
  6. Chicken provides lean, quality protein and is a moderate source of iron. When foods containing iron are combined with sources of vitamin C, like the lemons and oranges in this recipe, the absorption of iron in the body is enhanced.
