60 ml peanut oil 1/4 cup
20 ml red wine vinegar 4 tsp
4 ml Western Family Light Soya Sauce ¾ teaspoon
15 ml honey mustard 1 Tbsp
1 ml dried dill weed 1/4 tsp
1.5 l crisp, washed spinach leaves, torn up 6 cups
1½ apples, quartered, cored and diced 1½
125 ml unsalted dry roasted peanuts ½ cup
30 ml coarsely grated fresh parmesan cheese from the deli 2 Tbsp
directions
  1. For the dressing, combine oil, vinegar, soy sauce, honey mustard and dill weed in a jar. Shake well. Set aside.
  2. For salad, arrange spinach on plates. Top with apples, peanuts and cheese.
  3. To serve, shake dressing and drizzle over salads.
  4. Peanuts are a source of healthy, monounsaturated fats. Like all nuts, they are high in calories. Enjoy about 1/3 cup at a time as a snack.
