Ingredients
1 cup (250 mL) Western Family flour
1/2 tsp (2.5 mL) salt
1/2 tsp (2.5 mL) nutmeg
2 tsp (10 mL) granulated sugar
1 cup (250 mL) 2% milk
3 Western Family eggs
Non-stick cooking spray
2 cups (500 mL) fresh berries
Directions

In a bowl, mix flour, sugar and salt and set aside. In mixing bowl with electric mixer, beat eggs for 2 minutes until light and fluffy.

Add milk and blend well. Then add flour mixture and blend again. Let stand at room temperature 1 hour before cooking, or cover and refrigerate overnight.

Heat an 8 inch non-stick frying pan over medium-high heat. Lightly mist with non-stick cooking spray.

Pour just less than 1/4 cup of crepe batter into the pan and quickly swirl to spread evenly.

Cook for about 1 minute or until lightly brown, flip and cook for another minute. Remove from heat.

Place crepe on plate and spread fresh berries and vanilla yogurt or whipping cream. Fold or roll and serve.
