Urban Fare's Winter Veggie Salad

Ingredients
Sweet Potato
Rainbow Carrots
Brussels Sprouts
Turnip
Beets
1 cup Farro (or your favourite grain)
1/4 cup Citrus Juice
1/4 cup Olive Oil
2 tsp White Wine Vinegar
2 tsp Honey
Salt and Pepper to taste
Fresh Arugula
Directions
- Roast a pan of the Sweet Potato, Rainbow Carrots, Brussels Sprouts, Turnip and Beets for 20 minutes at 425.
- Prepare 1 cup your favourite grain. (i like to use farro cooked in broth but feel free to substitute quinoa, barley, brown rice, etc.)
- Make a citrus honey dressing. (shake together 1/4 c citrus juice, 1/4 c @westernfamilyca olive oil, 2 tsp @westernfamilyca white wine vinegar, 2 tsp @westernfamilyca honey, salt and pepper to taste.)
- Layer farro, fresh arugula, and roasted veggies and toss with dressing.
- Optional: top with nuts, cheese and/or protein of choice!
