4 local cobs of corn
1 Tbsp olive oil
4 Tbsp mayo (you can use regular or vegan)
4 Tbsp cojito cheese (or sub for feta) + extra to finish
1 clove fresh garlic, minced
2 tsp chili powder + extra to finish
Fresh cilantro
Directions
  1. Heat BBQ to medium-high heat
  2. Shuck corn, brush with olive oil, and place on hot grill
  3. While your corn cooks, mix mayo, cheese, garlic and chili powder in a small bowl
  4. Once corn is cooked, brush with mayo mixture
  5. Sprinkle with chili powder, cojita and fresh cilantro. Enjoy!
