1 cup pitted dates
1 cup rolled oats
1 cup protein powder (your choice of flavor)
1/2 cup nut butter (such as almond butter or peanut butter)
1/4 cup honey or maple syrup
1/4 cup chopped nuts (e.g., almonds, walnuts, or cashews)
1/4 cup dried fruits (e.g., cranberries, raisins, or apricots)
1 teaspoon vanilla extract
Pinch of salt
1/4 cup chocolate chips
1/4 cup chia seeds or flaxseeds
1/4 cup coconut flakes
Directions
- Prepare the Dates: In a food processor, pulse the pitted dates until they form a sticky paste-like consistency.
- Mix the Ingredients: In a large mixing bowl, combine the rolled oats, protein powder, nut butter, honey or maple syrup, chopped nuts, dried fruits, vanilla extract, and a pinch of salt. Add the date paste to the mixture.
- Optional Add-ins: If you're including chocolate chips, chia seeds, or coconut flakes, add them to the mixture as well.
- Combine the Ingredients: Using a spatula or your hands, mix all the ingredients until well combined. The mixture should be slightly sticky but easily moldable.
- Press into a Pan: Line a square or rectangular baking pan with parchment paper, leaving some overhang for easy removal. Press the mixture firmly into the pan, using your hands or the back of a spoon to create an even layer.
- Chill: Place the pan in the refrigerator for at least 1-2 hours, or until the mixture is firm and set.
- Cut into Bars: Once the mixture is set, remove the pan from the refrigerator and lift the bars out using the parchment paper overhang. Place on a cutting board and use a sharp knife to cut into bars of your desired size.
