Ingredients
2 lbs lamb chops-thick cut
4 cloves garlic
1/4 cup olive oil
Zest from 1 lemon
2 sprigs rosemary
2 sprigs thyme
kosher salt
Directions

Salt the lamb chops 45 minutes before starting

Remove your rosemary & thyme from the stems & give them a rough chop

Mince your garlic & mix with the herbs & lemon zest & marinate lamb chops making sure they are covered

Place in fridge for an hour/overnight

Heat the grill to medium & grill the lamb for 6-7 minutes per side, or until the internal temp is about 135°f – you want medium doneness here

Let the lamb rest, covered in foil for about 10 minutes before serving
