Corn Ribs with Creamy Jalapeño Cilantro Dip

Ingredients
3 corn ears, husks removed
2 - 3 tbsp Western Family Unsalted butter or oil
1/2 - 1 tsp Paprika
1 tsp Onion powder
Pinch of salt (to taste)
½ cup Mayonnaise
1/4 - 1/2 cup Chopped fresh cilantro
1 jalapeño (deseeded, optional)
1-½ tbsp freshly squeezed Lime juice
1 - 2 tbsp Sour cream (optional)
1-3 cloves Garlic (based on preference for strength of garlic)
Salt to taste
Pinch of ground Black pepper
Directions
- Lightly boil corn in salted water for 5 - 7 minutes. Pat dry and let cool.
- Turn on the oven or air fryer at 375F.
- In the meantime, prep your mix to brush on top of corn, by mixing all ingredients in a bowl. Adjust to taste. It shouldn’t be too strong in flavour.
- When the corn has cooled down, cut each corn ear into halves horizontally with a sharp knife and on a stable surface. Watch your hands and be very careful. Take your time here.
- Once cut in halves, cut them lengthwise into 4 strips and brush them with the corn mix.
- Pop them in the oven and bake for 20 - 30 mins, flipping half way through. If using air fryer, cook for 10 - 15 mins less.
- In the meanwhile, prepare your dip by blitz everything until smooth. Taste and adjust.
- Let corn cool when out of the oven and serve with the creamy spicy dip!
