Grilled Chicken Thigh Street Taco

Ingredients
1 ½ lbs boneless, skinless chicken thighs
2 tbsp Western Family olive oil
2 tbsp lime juice
1 tbsp Western Family chili powder
1 tsp Western Family ground cumin
1 tsp onion powder
1/2 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon black pepper
1 cup chopped romaine lettuce
1/2 red onion, sliced
1 jalapeño, sliced
1/4 cup chopped fresh cilantro
Lime crema (recipe on @foodess blog)
8 flour tortillas
Lime wedges, for serving
Directions
- In a large bowl, whisk together the olive oil, lime juice, chili powder, cumin, onion powder, garlic powder, smoked paprika, oregano, salt, and black pepper.
- Add the chicken thighs to the bowl and toss to coat in the marinade. Cover and marinate for 30 minutes, at room temperature or up to 24 hours in the fridge.
- Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken for 4-6 minutes per side, or until cooked through with an internal temperature of 165°F.
- Let the chicken rest for a few minutes before slicing into strips.
- Warm the tortillas on the grill or in the microwave.
- To assemble the tacos, place some chicken strips on each tortilla, then top with lettuce, sliced red onion, jalapeño, cilantro, and crema.
- Serve with lime wedges on the side.
