Ingredients
4 no skin, no bone, chicken thigh
2 ea Burger buns
1 cup Panko
4 tbsp Flour
2 Eggs
1 Sliced tomato
1 cup Sliced romaine
3 tbsp Dijon mustard
1 tbsp Smoked paprika
1 tsp Chili flakes
Salt to taste
1 cup Olive Oil
Directions

Brine the chicken for 30 minutes on luke warm salt water

Remove from the water, rinse it and pat dry

Season the chicken with chili flakes, smoked paprika and salt

Whisk the eggs and add a pinch of salt

Time to bread the chicken: Start dipping into the flour. Run the chicken in egg coat. Lay it on the panko flour

Heat a large skillet, add the chicken. Cook for 3 minutes, flip it and let it cook for more 3 minutes.

Remove chicken and let it dry on paper towel to remove excess grease

Cut bun in half, spread the Dijon.

Place the lettuce, tomatoes and finish with 2 pieces of chicken.
