Ingredients
2 6 oz sockeye fillets
150g grape tomatoes
220g mini potatoes
75g green beans
1 shallot
1 tbsp grainy Dijon
honey
olive oil
wild green salad mix
kosher salt
Fresh cracked pepper
Directions

Boil potatoes 12 min

Add green beans & boil for 1 minute, drain

Mix 1 tbsp olive oil, lemon juice, honey and Dijon

In pan, heat olive oil & place salmon face down in pan

Cook salmon for 2 minutes, add shallots & half the dressing to the pan and turn salmon over for another 2 mins.

Place mixed greens, beans and potatoes in a bowl and mix well

Divide salad mix & place in the center of 2 plates, place the salmon on top & drizzle with shallots and pan drippings
