Zucchini Noodles

Ingredients
1 Zucchini, washed & ends trimmed
1 Carrot, peeled and ends trimmed
4 tbsp Canola oil
2 piece- 4 oz each Atlantic Salmon
2 Lemons
Almond Parm
1/4 cup Sliced almonds
1/4 cup Nutritional yeast
1/2 tsp Garlic powder
1/2 tsp Onion powder
Salt and Pepper to taste
Directions
- Once all your vegetables are washed. Dry off and run each vegetable separately through a spiralizer.
- Season salmon with salt and pepper, squeeze lemon and bake it at 350 for 10 minutes
- Heat a medium fry pan. Once hot add 2 Tbsp of Canola oil. Add the carrots noodles first and sauté until until just al dente. Add the zucchini noodles and continue to cook until both noodles are al dente. This should ideally take about 5 minutes.
- Remove from heat and place into 2 bowls.
- Take the liquids from the salmon tray, and pour over the bowls. Place fish on top of noodles.
- Combine all almond parm ingredients in to food processor or blender and pulse until it resembles sprinkled parm. Garnish your bowl.
