Minty Green Avocado Smoothie

Ingredients
2 cups coconut water
1 cup packed spinach leaves
½ small lime peeled
2 ripe kiwis peeled and coarsely chopped
2 tbsp fresh mint leaves
½ ripe avocado pit and skin discarded
1 granny smith apple cored and coarsely chopped
4 ” piece English cucumber
Directions

Combine all ingredients in blender container in the order listed and process on high speed for 30 seconds or until completely smooth. If using passionfruit, pour a layer of smoothie into a glass followed by a layer of passionfruit and repeat.

If you’re serving smoothies for a special brunch and want to be fancy, fill clear glasses ¼ full with smoothie and freeze until firm. Add a scoop of passionfruit seeds or pomegranate arils on one side then gently fill the smoothie glasses to the top.
