Grilled Steak, Arugula, and Roasted Red Pepper Sandwich

Ingredients
2 boneless ribeye or sirloin steaks (about 8 oz each)
Salt and freshly ground black pepper, to taste
1 tablespoon olive oil
1 teaspoon minced garlic (optional)
4 slices of your favorite bread (sourdough, ciabatta, or baguette work well)
1 cup arugula leaves, washed and dried
1 cup roasted red pepper strips (you can use jarred or roast your own)
1/2 red onion, thinly sliced
4 slices provolone or mozzarella cheese
2 tablespoons balsamic glaze (optional)
Directions
- Preheat your grill or stovetop grill pan over medium-high heat.
- Pat the steaks dry with paper towels and season generously with salt and black pepper on both sides.
- Drizzle olive oil over the steaks and rub in the minced garlic, if using. This adds extra flavor to the steak.
- Place the steaks on the grill and cook to your desired level of doneness. For medium-rare, cook for about 3-4 minutes per side. Adjust the time based on your preference and the thickness of the steaks. Once cooked, remove the steaks from the grill and let them rest for a few minutes before slicing.
- While the steaks are resting, prepare the other sandwich components. Toast the slices of bread if desired.
- Assemble the sandwiches: Place a layer of arugula on two slices of bread. Top with slices of grilled steak.
- Add a layer of roasted red pepper strips on top of the steak.
- Place the sliced red onion on top of the peppers.
- Add two slices of cheese on each sandwich.
- Drizzle balsamic glaze over the cheese if using. This adds a tangy sweetness to the sandwich.
- Top with the remaining slices of bread to complete the sandwiches.
- If desired, you can place the sandwiches back on the grill or in a pan for a minute or two to melt the cheese and warm the sandwich through.
- Slice the sandwiches in half diagonally and serve warm.
